
Good Sans Gluten, or Good Without Gluten is the book I co-authored with Mitsuru Yanase, Chef de Cuisine and Frederique Jules, the Owner of Noglu. It features the pastry and bread recipes I developed/adapted for the restaurant. It was first published in French by Hachette in October 2013 and then released in English by Murdoch in September 2014. The recipes were collected from the very early days of Noglu as I was just beginning my work in Gluten free. The recipes are the same as I used in the restaurant, but with time I slowly adjusted the recipes in the kitchen to improve the pastries offered at Noglu.
As a pastry chef, I'm quite a perfectionist, however once something leaves my hands, it is often out of my control. After the book was printed, It was brought to my attention that there are some errors in the recipes; maybe some information got "lost in translation". I want everyone who has purchased, or purchases this book to be able to recreate the recipes with ease and enjoyment. You can contact me if you have questions.
